The Champagne was introduced in Catalunya during the French occupation in Spain between the 1823 and 1827。 After the introduction of this new and unknown product, the Catalan Agricultural Institute encouraged the production of an sparkling wine following the champenoise method (also called the traditional method) of the Champagne but with local Catalan grapes, to create the “Cava”.
In 1969, Cava was recognised as its own origin designation and elaboration, described as a sparkling wine “elaborated by the traditional method, of the second fermentation in the bottle, and aging in the cava”.

The experience and the knowledge acquired in the area of , led Marcos Lojo to the selection of 12 winegrowers from the Salnés Valley and chose vineyards privileged by the quality of Albariña grape that they produce. They are farms with vineyards planted in some cases more than 70 years ago, in the areas of: A Carabuxeira (Sanxenxo), Padrenda (Meaño), Cabeza de Boi (Méis), A Pedreira (Sisán), Castrelo (Cambados) and Lores (Meaño), which grow quality Albariño grapes in the making of Chan de Rosas wines.

The tradition of the cultivation of the vineyard in Fuentelcésped dates from 1177, the time when Ribera del Duero was repopulated by Christians. Vineyards were planted in the valley of the Nava stream that is suitable for cultivation due to its sunny slopes, and its abundant loose soil and pebbles.

After the consolidation of the term of Fuentelcésped, the strains of grapes that best produced grapes were selected and with them new vineyard plantations are made. This is the place where the Díaz Bayo family has dedicated, for more than ten generations, to the cultivation of the vineyards and to the elaboration of wine in Ribera del Duero.

Marqués de Tomares is a family winery, whose beginnings date back to 1910 when “El abuelo Don Román Montaña” devoted himself to the elaboration and aging of wines, thus becoming the founder of a saga of master artisans in wines, nowadays it is their grandchildren who are continuing his work with great success.

The winery is located in Fuenmayor – La Rioja, in the sub-zone of Rioja Alta, it is a town where it is historically characterized by the great quality of its grapes for the aging of wines.
